In Spain, the finest olive oils carry a badge much like the great wine regions of France: a Denominación de Origen Protegida (DOP) — a Protected Designation of Origin. It guarantees that the oil comes from a specific place, made from specific varieties, to a specific standard. Andalusia holds twelve of these olive-oil DOPs — more than anywhere — and knowing them is the shortcut to buying, and drinking in, the very best. Several of them lie within an easy drive of Cortijo Bujio.

A DOP oil must be grown, milled and bottled within a defined region, from the region's authorised varieties, and pass both chemical and tasting checks by a regulatory council (consejo regulador). In practice it means traceability, place and character — the opposite of an anonymous supermarket blend.
